2 cups Strawberries
1 Red onion, small
¼ cup Shelled Pistachios
¼ cup Basil leaves
2 cups Pea shoots
- Slice strawberries into slivers.
- Dice onions.
- Chiffonade basil.
- Add berries, onions, basil, and pistachios to a medium bowl and toss to combine.
- Place pea shoots on a medium platter and arrange strawberry mixture on top.
- Drizzle with vinaigrette to taste.
✧ Instead of pea shoots, substitute 2 cups of arugula or mixed greens.
✧ To convert this salad into a larger meal, add a serving of grilled chicken or blackened halibut.
